Growing up, equestrian Esther Saunders swore she wouldn't be simply a farmer's wife like her mother. On top of winning multiple championships as a horse-rider, she became the first person in her family to receive a college degree. Despite her accomplishments, she endured several heartbreaks, including three marriages, the deaths of her parents, and, eventually, her younger brother. And not to mention the future of her family's farm is in jeopardy when Daniel Covington announced he had inherited the shares from his late father that were given to him by her dying father due to a loan that was given to rescue the farm due to her father's drinking, cutting into the profits.

 

Also, she wasn't keen on her son Steven starting to date Daniel's considerably younger daughter, Courtney, so much so that she conspired with Daniel to break them up by bringing Steven's ex-wife Lorraine and their son Evan to town. Though the scheme wasn't successful, somehow Daniel managed to get their dairy products into a regional store chain. Yet she wasn't keen when she saw his mother who was her former best friend turned enemy, Deirdre Covington, return to Radcliffe after thirty years. It was eventually revealed that Deirdre and Esther's father, Jimmy, had an affair that also called into question the paternity of Deirdre and Patrick's daughter Emma. However, Deirdre informed her that she was her late husband and not her father's. Steven stumbled upon a letter from over thirty years ago addressed to Jimmy. Instantly recognizing Dee's handwriting Esther confronted her about it. And since then, the letter has been kept in her jewelry box.
